Easy-to-make healthy burgers

This recipe makes two tasty burgers. You can save time by doubling the burger mixture and freezing extra patties for later use.

Ingredients

  • 75 millilitres (1/3 cup) top-quality minced beef
  • 2 garlic cloves, crushed
  • 1 small carrot, grated
  • 1 small fresh beetroot, grated
  • 225 millilitres (1 cup) cooked kidney beans, mashed
  • 15 millilitres (1 tablespoon) parsley, roughly chopped
  • 1 egg
  • 30 millilitres (2 tablespoons) wholemeal breadcrumbs
  • 15 millilitres (1 tablespoon) olive oil
  • 1 onion, sliced in rings
  • 2 avocado slices
  • 2 tomato slices
  • a few lettuce leaves, torn
  • 2 wholemeal buns

Directions

  1. Mix the beef, garlic, carrot, beetroot, kidney beans, parsley, egg and breadcrumbs together in a large bowl. Form the mixture into two small patties.
  2. Heat the oil and cook the onion rings in a frying pan over a low heat for 10 minutes or so, until they are caramelized – brown but not burnt.
  3. Meanwhile, fry the meat patties in a non-stick pan on both sides until brown.
  4. Hollow out two crisp wholemeal buns. Place the burgers and the caramelized onion on the buns and pile the avocado, tomato and lettuce on top.

Homemade, healthier and easy to make: these burgers are a must-try! But just a word of advice...the extras you make may not stick around for very long once your family finds out how delicious they are!
